Seafood Lasagna
- 1 1/2 lb. box lasagna noodles
- 2 cans frozen cream of shrimp soup
- 2 c. or 2 cans crab meat or shrimp
- 2 c. or 1 lb. cream-style cottage cheese
- 1 (8 oz.) pkg. cream cheese
- 1 c. onion, finely chopped
- 1 egg
- 2 tsp. basil
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. grated Cheddar cheese
- 4 medium tomatoes or 2 cans, drained
- 2 Tbsp. sugar
- Cook noodles as directed on box; set aside.
- Heat and mix the crab meat and additional shrimp.
- Mix cottage cheese and cream cheese.
- Add onion, egg, basil, salt and pepper.
- Place in greased 9 x 13-inch casserole.
- Layer half of the noodles and half of the cottage cheese mixture.
- Sprinkle with grated cheese, then shrimp mixture.
- Repeat, reserving grated cheese for topping.
- Top with peeled, sliced tomatoes and sprinkle with sugar.
- Add remaining cheese on top.
- Bake 1 hour, uncovered, at 350u0b0.
- Yields 8 servings.
