Pesto

  1. Cook the spaghetti in water, salt, and a drizzle of olive oil.
  2. Heat a little olive oil in a frying pan, and saute the garlic cloves and the peanuts for a few minutes.
  3. In the food processor, add the chives, garlic cloves, peanuts, scallion, mint, vinegar, and the remaining olive oil. Beat to a homogeneous cream. Add 3 tablespoons of hot water while the cream is forming. Season with salt and ground mustard.
  4. Add the cream to spaghetti, sprinkle with cheese and chives.
