Turkey Rolls With Pesto And Tomato Sauce
- 7/8 pound steaks turkey, 3 - 4 steaks
- 2 tablespoons pesto sauce
- 3 tablespoons corn flour
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 3 tablespoons olive oil divided
- 1 tablespoon butter
- 2 1/4 cups plum tomatoes seasoned with onion and garlic, canned
- 1/4 teaspoon salt
- fresh basil leaves chopped
- With a meat mallet gently flatten the steaks.
- Smear 1/2 tablespoons of red pesto on each steak. Roll steaks into rolls, secure each roll with wooden or metal toothpicks.
- Roll the meat in a corn flour, pepper and salt mixture.
- Saute rolls over moderate heat in a mixture of 2 tablespoons of olive oil and butter for about 3 minutes on each side until golden. Set aside to cool just a little.
- Break plum tomatoes with a wooden spoon into smaller chunks, simmer for 2 minutes in the remaining olive oil (1 tablespoon), add salt, and sprinkle with fresh basil.
- Take toothpicks out of the meat, and cut each roll into slices of desired thickness.
- Serve with cooked pasta and tomato sauce.
