Turkey Rolls With Pesto And Tomato Sauce

  1. With a meat mallet gently flatten the steaks.
  2. Smear 1/2 tablespoons of red pesto on each steak. Roll steaks into rolls, secure each roll with wooden or metal toothpicks.
  3. Roll the meat in a corn flour, pepper and salt mixture.
  4. Saute rolls over moderate heat in a mixture of 2 tablespoons of olive oil and butter for about 3 minutes on each side until golden. Set aside to cool just a little.
  5. Break plum tomatoes with a wooden spoon into smaller chunks, simmer for 2 minutes in the remaining olive oil (1 tablespoon), add salt, and sprinkle with fresh basil.
  6. Take toothpicks out of the meat, and cut each roll into slices of desired thickness.
  7. Serve with cooked pasta and tomato sauce.
