Tacos Al Pastor
- 2 pounds pork shoulder
- 1/4 stick annatto El Yucateco, / Achiote
- 2 tablespoons vinegar
- 1/2 cup orange juice
- 2 garlic cloves
- 1/4 onion
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- 1 1/2 tablespoons salt
- 2 teaspoons oil
- 2 guajillo chiles boiled seedless and deveined
- coriander leaves chopped fine
- onion chopped
- pineapple small slices
- Blend chiles, annatto/achiote, vinegar, orange juice, garlic, onion, oregano and salt, then strain.
- Cover the meat with the mixture and marinate for at least two hours in the refrigerator.
- Fry the meat in the oil at medium heat, covered, moving constantly until it is ready, for about an hour.
- Tip: Serve your tacos with onion, lemon, coriander and pineapple.
