Turkey Meatball Kebabs With Herbed Rice

  1. Preheat the oven to 325u0b0F. Cook the rice in boiling salted water according to the package directions.
  2. Meanwhile, place the ground turkey, chopped onion, breadcrumbs, egg, mustard and paprika in a large bowl. Season with salt and black pepper and mix well. Form into 12 balls. Heat the oil in a large skillet on medium heat. Cook the meatballs in batches for 7 mins, or until browned all over. Remove from the pan. Add 1/2 the butter and 1/3 of the herbs to the hot skillet and cook until the butter is melted. Remove from the heat.
  3. Thread 3 meatballs on each of 4 metal skewers, alternating with onion, apple and pepper wedges. Roll in the herbed butter and place in a baking pan. Bake for 8-10 mins.
  4. Drain the rice and return to the pan. Cut the remaining butter into small dice and add to the rice along with the remaining herbs. Toss well..
  5. Remove the kebabs from the oven. Drizzle with the remaining herbed butter and serve with the rice.
