Holli'S Chicken Pot Pie

  1. Preheat oven to 425 degrees. Simmer chicken in first seven ingredients (broth, water, onion, parsley, celery, salt, pepper, clove of garlic) for 20 minutes
  2. Remove chicken
  3. Strain broth & reserve 2 cups
  4. Cut chicken into bite sized pieces. Set aside.
  5. Melt butter over medium heat in large saute pan
  6. Saute onion, celery, garlic until soft
  7. Stir in salt, pepper, thyme & flour
  8. Remove from heat when it bubbles
  9. Stir in chicken broth
  10. Return to heat until thick then mix in chicken and vegetables
  11. Pour into DEEP dish pie pan (no bottom crust)
  12. Place pastry over top, Pinch and form crust Cut one-inch slits in top to prevent gravy from boiling over sides.
  13. Brush with egg white
  14. Bake at 425 for 30 - 40 mins.
