Mexican Shrimp Cocktail
- 4 cups tomato juice
- 2 limes
- 1 teaspoon worcestershire sauce
- 2 tablespoons sugar
- 1 tablespoon grated horseradish x heaping
- 2 tablespoons red onion grated
- 1/2 teaspoon freshly ground black pepper
- salt to taste
- Tabasco
- hot sauce
- 1 cucumber small, peeled, halved and chopped
- 2 green onions sliced thin
- 1 avocado pitted, peeled and cut into small pieces
- 1 pound cooked shrimp or any cooked seafood such as scallo
- salmon
- halibut
- In large bowl, combine tomato juice, juice of 1 1/2 limes, Worcestershire, sugar, horseradish and red onion. Season to your liking with salt, pepper and hot sauce. Refrigerate.
- In a medium bowl, combine cucumber, green onions and avocado. Squeeze remaining lime juice over all.
- To serve, put shrimp in glass bowl or individual glass serving glasses or dishes. Pour a generous amount of sauce on top and spoon on some cucumber avocado.
