Baked Banana Oatmeal
- 1 cup rolled oatmeal
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg fresh
- 1/2 teaspoon salt
- 1/4 teaspoon allspice Optional:, or ground ginger
- 2 mashed bananas ripe
- 1 cup soy milk Unsweeted, or Milk
- 1 teaspoon vanilla
- 1/4 cup raisins
- Preheat the oven to 3500 F and butter or oil 8" X 8" baking pan.
- Mix together all of the dry ingredients, except the raisins, in a medium bowl.
- In a separate bowl, mix together the milk and bananas to further mash the bananas. Mix in the vanilla. Pour the wet ingredients into the dry ingredients and mix until combine. Fold the raisins into the mixture.
- Pour the mixture into the baking pan and place in the oven. Bake for 25 - 30 minutes until the top of the oatmeal browns and is set. Trust your judgment here you can use more or less baking time, the more you bake it the thicker/chewier the finished oatmeal will be.
