Green Gazpacho
- 1/4 cup water for the soup
- 1 cup green grapes for the soup
- 1/2 cup cucumber chopped, for the soup
- 1 clove garlic for the soup
- 3 stalks celery for the soup
- 1 cup bread for the soup
- 2 1/2 teaspoons sherry vinegar for the soup
- 1 teaspoon kosher salt for the soup
- 1/3 cup olive oil for the soup
- 1 pinch cayenne pepper for the soup
- 1 cup green grapes sliced for the relish
- 1 cup cucumber diced for the relish
- 1 teaspoon jalapeno diced for the relish
- 1/2 cup green tomatoes diced for the relish
- 1 pinch freshly ground black pepper for the relish
- 1/2 teaspoon kosher salt for the relish
- Combine water, grapes, cucumber, garlic, celery, and bread in a blender. nlend at a high speed until very smooth, about two minutes. nake sure to scrape down the sides with a rubber spatula to incorporate everything.
- With the blender running, add the sherry vinegar and kosher salt. nlowly drizzle in the olive oil. Once creamy, add in the cayenne and blend for a few more seconds.
- Transfer to a bowl or container, cover, and refrigerate until cold.
- For the relish, toss all ingredients together until well combined.
- Pour gazpacho into a bowl and top with the grape relish. Serve with a drizzle of olive oil.
