Easy Spinach And Broccoli Soup With Parmesan Recipe
- 63 3/8 cups chicken stock I used my homemade one
- 1 tablespoon olive oil or fat from your stock
- 1 onion finely chopped
- 2 tablespoons flour
- 1 broccoli chopped into pieces
- 4 garlic cloves minced
- grated nutmeg
- black pepper
- white pepper
- celery salt or you can use fresh one
- 2 handfuls spinach I used frozen one
- 1 tablespoon butter optional
- 1/2 cup grated Parmesan cheese
- cream to decorate, optional
- Heat up a medium/large pot on medium heat and fry your chopped onions on olive oil (or fat from your stock) until golden. Add 2 tablespoons of flour and stir well. Add your broccoli pieces and stir. Add your crushed/minced garlic and grated nutmeg. Stir well. ndd your chicken stock (or bought stock, bullion or water) to your pot. neason with black pepper, white pepper, celery salt and stir well. After 3 minutes add 1-2 handfuls of spinach. Leave to simmer for additional 3 minutes (leave the spinach to defreeze or defreeze it in the microwave before).
- Now is the time to blend the soup. Use a hand blender or a food processor until you have your desired consistency. ndd y our butter and Parmesan cheese now and stir it in well and allow it to melt. nour meal is ready .nnEnjoy.nnTIP: you can decorate with some cream or extra parmesan.
