Caramel Ice Cream Cookie Sandwiches
- 2 ounces dark chocolate broken into pieces
- 3/4 cup flour
- 1 teaspoon cocoa powder
- 1/2 teaspoon baking powder
- 2 tablespoons butter softened
- 1/4 cup sugar
- 1 egg
- 1 pint caramel ice cream
- 2 ounces jelly blackberry
- Preheat oven to 350u0b0F. Line a baking sheet with parchment paper. For the cookie dough, melt the chocolate in a heatproof bowl set over a pan of simmering water. In a bowl, mix together the flour, cocoa powder and baking powder. In a separate bowl, beat the butter and sugar with an electric mixer until creamy. Beat in the egg, then the melted chocolate, then the flour mixture, until smooth. On a lightly floured work surface, roll out to 2 inches thick. Cut into 10 rectangles and lay on the baking sheet. Chill 1 hour. Bake 12-15 mins. Transfer to a wire rack to cool.
- Spread half the cookies with jam. Top them with slices of ice cream and the remaining cookies. Serve immediately.
