Apple And Spice Cranberry Sauce

  1. Finely chop shallot.
  2. Heat oil in a medium saucepan over medium-high heat. Add shallot and cook until slightly softened, 2-3 minutes. Stir in cranberries, granulated and brown sugars, cider, cinnamon, and allspice.
  3. Bring mixture to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries have popped and sauce thickens slightly, 8 minutes.
  4. Meanwhile, peel, core, and cut apple into 1/4-inch dice.
  5. Stir apple into sauce and cook until slightly softened, 2 minutes. Let cool to room temperature.
  6. Chill sauce at least 3 hours before serving to thicken.
