Apple And Spice Cranberry Sauce
- 1 shallot medium, about 1/3 cup chopped
- 1 tablespoon canola oil
- 1 pound cranberries fresh or frozen
- 2/3 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1/2 cup apple cider
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1 golden delicious apple
- Finely chop shallot.
- Heat oil in a medium saucepan over medium-high heat. Add shallot and cook until slightly softened, 2-3 minutes. Stir in cranberries, granulated and brown sugars, cider, cinnamon, and allspice.
- Bring mixture to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries have popped and sauce thickens slightly, 8 minutes.
- Meanwhile, peel, core, and cut apple into 1/4-inch dice.
- Stir apple into sauce and cook until slightly softened, 2 minutes. Let cool to room temperature.
- Chill sauce at least 3 hours before serving to thicken.
