Macaroni And Cheese With Ham
- 8 3/4 ounces macaroni
- 5 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2/3 pound frozen mixed vegetables
- 4 ounces cheddar cheese grated
- 2 ounces Parmesan cheese grated
- 2 tablespoons fresh flat leaf parsley chopped
- 3 1/2 ounces ham sliced, to serve
- Cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain then return to pan.
- Meanwhile, melt butter over medium heat. Add flour and cook until light golden brown. Gradually whisk in milk until smooth. Cook, stirring, for 3-4 mins, or until thick and bubbly. Reduce heat, add vegetables and simmer for 2-3 mins, or until vegetables are tender. Remove from heat, add cheese and parsley. Season. Toss with pasta then transfer to serving dishes and top with ham.
