Puff Pastry With Salmon, Feta And Spinach

  1. Dice onion.
  2. Heat olive oil in a pan and and saute onion.
  3. When onion is almost translucent, add spinach and saute for a few minutes.
  4. Season to taste with salt and pepper. Set aside and let cool.
  5. When cool, crumble feta cheese and mix into spinach mixture.
  6. Preheat oven to 200u0b0C (approximately 400u0b0F).
  7. Roll out puff pastry sheet and cover a third with smoked salmon.
  8. Top smoked salmon with spinach and feta mixture and roll up.
  9. Shape pastry into a circle and place on a baking tray lined with a non-stick silicone baking liner or a sheet of parchment paper.
  10. Bake for about 20 minutes.
  11. Serve warm or cold.
