Twice Baked Potato
- 8 medium potatoes
- 1/2 cup finely chopped onions
- 1/4 cup peppers finely chopped, any kind
- 1 large garlic clove grated
- 1/2 cup cheese your favorite
- 1 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter soft
- 1 tablespoon chopped parsley finely
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground turmeric
- 2 tablespoons olive oil
- Scrub your potatoes well and dry them off. Bake them at 425*F for 45 minutes. Check if they are done by inserting a knife into the potato; if the knife slides in easily the potatoes are done.
- TIP: You can bake your potatoes in the microwave. Just follow the settings for your microwave. You will save yourself at least half an hour.
- Pull the potatoes out of the oven and let them cool for 10 minutes, so you can handle them easily. Remove top skin and scoop out potato meat in a bowl and mash them.
- Add salt, pepper, ground turmeric, garlic, sour cream, cheese, onion, parsley, and peppers then mash to combine.
- You can stop here and serve the mashed potatoes as a side dish, or you can continue to make the potatoes more uplifting.
- Spoon the potato mix back into the potato skins, smother the potato skins with olive oil, and place on a baking sheet.
- Sprinkle some more cheese over the top and bake for 15 minutes in a 425*F preheated oven.
- Serve in your favorite way and indulge!
