Twice Baked Potato

  1. Scrub your potatoes well and dry them off. Bake them at 425*F for 45 minutes. Check if they are done by inserting a knife into the potato; if the knife slides in easily the potatoes are done.
  2. TIP: You can bake your potatoes in the microwave. Just follow the settings for your microwave. You will save yourself at least half an hour.
  3. Pull the potatoes out of the oven and let them cool for 10 minutes, so you can handle them easily. Remove top skin and scoop out potato meat in a bowl and mash them.
  4. Add salt, pepper, ground turmeric, garlic, sour cream, cheese, onion, parsley, and peppers then mash to combine.
  5. You can stop here and serve the mashed potatoes as a side dish, or you can continue to make the potatoes more uplifting.
  6. Spoon the potato mix back into the potato skins, smother the potato skins with olive oil, and place on a baking sheet.
  7. Sprinkle some more cheese over the top and bake for 15 minutes in a 425*F preheated oven.
  8. Serve in your favorite way and indulge!

potatoes, onions, peppers, garlic, favorite, sour cream, milk, butter, parsley finely, salt, black pepper, ground turmeric, olive oil
