Hearty Cabbage Soup(A Main Dish Ready In 30 Minutes!)
- 8 oz. kielbasa (Polish sausage), sliced 1/4 inch thick (I use the lite kielbasa)
- 1 Tbsp. oil
- 1 medium onion, chopped (optional)
- 1 tsp. salt
- 1/2 tsp. thyme
- 1/4 tsp. pepper
- 1 cabbage, shredded coarse
- 1 can tomatoes (I chop the tomatoes small)
- 2 c. water or more if needed
- 1 can cannellini beans, drained (optional)
- In large heavy saucepan brown kielbasa in oil.
- Remove kielbasa.
- Pour off all but 1 tablespoon fat.
- Add onion and saute until tender.
- Stir in salt, thyme and pepper, then cabbage, tomatoes, sausage and water.
- Bring to boil.
- Reduce heat, cover and simmer 15 minutes or until cabbage is a desired tenderness. Stir in beans.
- Cook for a few minutes to heat beans.
- Serve with Italian bread.
