Rice Pudding Popsicles

  1. Heat up the milk with 3/4 cup of water and the cinnamon stick. Once the milk begins to boil add the rice and 1 teaspoon of vanilla extract.
  2. Let the rice cook under low heat for 30 minutes
  3. Once the rice is cooked, remove the cinnamon stick.
  4. Mix the condensed milk with remaining water and stir. Add it to the rice, along with a pinch of salt and remaining vanilla extract.
  5. Cook the mixture for 15 minutes or until all of the liquid has been absorbed by the rice.
  6. Add the cinnamon and mix well. Allow the rice to cool.
  7. Pour the mixture into popsicle molds, making sure that there is about 1/2 inch of space at the top.
  8. Add popsicle sticks to each mold and place the molds into the freezer for six hours.
