Homemade Chocolate Spread
- 1 lemon organic
- whipping cream 10 cl.
- soy milk 15 cl.
- 1 cup sugar
- 1 3/16 cups milk chocolate
- 2 13/16 tablespoons butter
- Get the lemon zest with a vegetable peeler.
- In a medium saucepan, boil the cream.
- Add the soy milk and bring to a boil again.
- Remove from heat and add the zest to infuse the milk.
- In another saucepan over high heat, add 20 grams of sugar and stir to melt, then add 10 grams sugar and melt.
- Repeat this process until sugar is completely used.
- Let caramelize the sugar until it has anl amber color.
- Remove from heat, add the chocolate and butter (beware of splashing).
- Cook over medium heat until smooth.
- Remove the lemon zest and gradually add the cream/milk mixture in the caramel/chocolate mixture.
- Transfer the chocolate spread into a jar.
- Keep in a cool place for a week.
