Prawn Alfredo Fettuccine
- 250 grams prawns peeled, deveined
- 2 cups cream thickened
- 1 cup cheese parmasen, grated
- 2 cloves garlic crushed
- 1/2 white onion finely chopped
- 500 grams fettucine pasta
- salt
- pepper
- olive oil
- parsley
- Bring 5 litres of water to the boil, add salt and a little olive oil to the water
- Add fettuccine to the water and cook for 10 minutes
- Strain fettucine, but do not rinse
- In a pan, heat a little olive oil, then add onions and garlic and brown for 3-4 minutes or until onions are soft
- Add the prawns to the pan cook for roughly 4-5 minutes, until prawns are pink but not quite cooked
- Add 2 cups of cream, 1 cup of parmesan cheese and parsley to the pan and simmer for 5 minutes minutes, stirring occasionally as so the mixture doesn't stick to the pan
- Finally, toss fettuccine through prawn alfredo and serve immediately
