Prawn Alfredo Fettuccine

  1. Bring 5 litres of water to the boil, add salt and a little olive oil to the water
  2. Add fettuccine to the water and cook for 10 minutes
  3. Strain fettucine, but do not rinse
  4. In a pan, heat a little olive oil, then add onions and garlic and brown for 3-4 minutes or until onions are soft
  5. Add the prawns to the pan cook for roughly 4-5 minutes, until prawns are pink but not quite cooked
  6. Add 2 cups of cream, 1 cup of parmesan cheese and parsley to the pan and simmer for 5 minutes minutes, stirring occasionally as so the mixture doesn't stick to the pan
  7. Finally, toss fettuccine through prawn alfredo and serve immediately
