Whole Wheat Biscuits
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon flax meal they are fine without, but more tender with the flax seed meal
- 1/3 cup coconut oil solid
- 1 tablespoon agave nectar
- 2/3 cup cold water plus 1-2 more tbsp if necessary
- Preheat your oven to 450 degrees. Combine the flour, baking powder, and salt in a mixing bowl.
- Cut in the coconut oil with a fork or a pastry blender until it forms small pea sized crumbles. You can also use your hands to do this, which can be messy and fun.
- Next, add the cold water and agave to the bowl and mix to combine.
- To keep things easy, knead the dough for about a minute right in the bowl. If the dough does not quite pull together, you can add another tablespoon or two of water (one at a time) to incorporate all of the flour.
- Grab chunks of dough, roll it between your hands and press into a flat circle. You can also roll the dough out and cut into circles with the top of a glass if you want the biscuits to be even and pretty. If you don't mind the inconsistencies that come from hand rolling then go for it - it keeps things simple.
- Bake them on an un-greased cookie sheet at 450 for 12 minutes.
