Stuffed Green Pepper
- 8 green peppers
- 1/2 c. chopped onion
- 1/2 tsp. minced garlic
- 2 lb. ground lean beef
- 1 1/2 c. cooked tomatoes
- 1/2 lb. mushrooms, sliced
- 1 c. diced Mozzarella cheese
- 1/2 c. V-8 juice
- 2 tsp. Worcestershire sauce
- 2 Tbsp. chopped parsley
- 1 Tbsp. oil
- 1/2 tsp. celery salt
- 1/4 tsp. basil or chervil
- 1 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. Parmesan cheese
- Cut peppers in half lengthwise and remove seeds and ribs. Drop peppers into boiling water; turn off and set aside for 5 minutes.
- Drain.
- Saute onion and garlic in oil until tender. Stir in beef and saute until evenly browned.
- Drain tomatoes, combining juice with V-8 juice and stir into skillet along with remaining ingredients except juices and Parmesan cheese.
- Cool slightly.
- Stuff peppers with meat mixture and set close together in greased baking dish.
- Pour tomato juice around them and sprinkle each with Parmesan cheese.
- Bake in 350u0b0 oven for 40 minutes.
