Garlic Shrimp

  1. Stir fry garlic and scallions in olive oil over moderate heat for about 2 minutes until limp and golden.
  2. Do not brown garlic.
  3. Add shrimp, lemon juice, wine, red pepper, black pepper and simmer uncovered for 2 to 3 minutes or until shrimp turns pink.
  4. Add tomato sauce and salt, bring to simmer.
  5. Add bread crumbs.
  6. Stir until mixture thickens slightly.
  7. Spoon over rice.
  8. Sprinkle with parsley.
  9. Serves 6.
