Baked Stuffed Eggs
- 1 doz. hard-cooked eggs
- 1 Tbsp. minced onions
- 1/2 tsp. butter
- 1 Tbsp. chopped parsley
- 1 tsp. prepared mustard
- 1 Tbsp. lemon juice
- salt and pepper
- 1/2 c. minced cooked ham
- 1 c. white sauce
- 1/2 c. buttered bread crumbs
- Cook the minced onion in the butter a few minutes.
- Mix with parsley, mustard, lemon juice and a little salt and pepper.
- Cut eggs in half, remove the yolks and mash.
- Mix with the onion, seasonings and ham.
- Add a little more lemon juice if needed for smoothness.
- Fill the white halves and arrange them in a baking dish.
- Pour the white sauce over them and sprinkle with the bread crumbs.
- Heat in moderate oven (350u0b0) until the top is browned. Serves 4 to 6.
- Real good and filling, too.
