Baked Stuffed Eggs

  1. Cook the minced onion in the butter a few minutes.
  2. Mix with parsley, mustard, lemon juice and a little salt and pepper.
  3. Cut eggs in half, remove the yolks and mash.
  4. Mix with the onion, seasonings and ham.
  5. Add a little more lemon juice if needed for smoothness.
  6. Fill the white halves and arrange them in a baking dish.
  7. Pour the white sauce over them and sprinkle with the bread crumbs.
  8. Heat in moderate oven (350u0b0) until the top is browned. Serves 4 to 6.
  9. Real good and filling, too.
