Berry Cheese Blintzes
- 10 prepared crepes
- 3 cups cottage cheese
- 2 tablespoons orange juice
- 2 tablespoons sugar
- 2 egg yolks
- 3 tablespoons butter
- 2 bags frozen mixed berries
- 1 cup sour cream
- Drain cottage cheese in strainer at least 20 minutes. Pat dry with paper towels.
- Blend cottage cheese, orange juice, sugar, and egg yolks in medium mixing bowl until well combined.
- Add 2-3 heaping tablespoons cheese mixture into center of crepe.
- Fold crepe in on both sides, then fold from bottom to top twice (like a burrito).
- Melt small amount of butter in frying pan (just enough to brown crepes).
- Brown folded crepes in butter on each side until golden.
- Microwave berries on high for 2-3 minutes, stirring occasionally, until warm.
- Spoon berries over crepes.
- Top with dollop of sour cream.
