Tandoori Chicken With Cucumber Raita
- 1 chicken cut into pieces
- 1 cup yogurt
- 2 teaspoons olive oil
- 2 tablespoons ginger minced
- 4 cloves garlic minced
- 2 teaspoons paprika
- 2 teaspoons coriander
- 1 teaspoon turmeric
- 1/8 teaspoon cayenne
- 1 teaspoon cumin
- 1 lime
- 1/4 cup cilantro minced
- 1 cucumber small, peeled seeded and chopped
- 1 cup yogurt
- 2 tablespoons mint chopped
- 1 tablespoon lime juice
- 1 clove garlic minced
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- Combine ingredients in large bowl. Make incisions in chicken approximately 1/2-inch apart. Place chicken in 9" x 13" pan. Pour marinade over chicken and turn to coat. Cover and marinate 6-8 hours, up to overnight.
- While chicken is marinating, combine Cucumber Raita ingredients in medium bowl. Refrigerate until ready to use.
- Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
- Remove chicken from marinade and arrange evenly spaced on Grill. Grill for 30-40 minutes, turning every 10 minutes until internal temperature is 165u0b0F. Some pieces may take longer to reach the recommended temperature, so remove from Grill in stages.
- Serve immediately with Cucumber Raita.
