Cheesecake With Cherry Syrup
- 5/8 cup cream cheese
- 1 3/4 ounces Rulo goat cheese without rind
- 5 3/8 tablespoons milk
- 2 3/8 tablespoons sugar
- 1/8 tablespoon gelatin plain
- 10 Maria Cookies
- 1 3/8 tablespoons butter
- 1 1/16 cups pitted cherries chopped
- 5 5/8 tablespoons sugar
- 3 7/8 tablespoons water
- 1/8 tablespoon gelatin plain
- For the crust, crush cookies and mix well with the melted butter.
- Press mixture in an even layer into each mold and flatten carefully with the back of a spoon.
- Refrigerate until cool.
- For the cheesecake, heat cream cheese, cheese, milk and sugar in a saucepan and bring to a boil.
- When it starts to boil, remove from heat and stir in gelatin until dissolved.
- Let cool.
- Pour mixture into prepared molds.
- Refrigerate until cool.
- For the cherry syrup, place cherries, sugar and water in a saucepan and bring to a boil.
- Cook for about 20 minutes, until syrup thickens, stirring often.
- Remove from heat and add gelatin.
- Let cool completely and add to the molds.
- Refrigerate until completely cool and gelatin is set.
