Lamb With Basil Stuffing

  1. Preheat oven to 350u0b0F.
  2. In a medium frying pan, cook bacon over high heat for 3-4 mins, until crisp. Mix with breadcrumbs, herbs, pine nuts, garlic, orange zest and cumin. Coat lamb in mixture, roll up and secure with butcher's twine.
  3. In a large frying pan, heat oil over high heat. Sear lamb for 8-10 mins, until browned on all sides. Transfer to a rack in a roasting pan. Season. Roast for 20-25 mins, or until cooked to your liking. Let rest, covered, for 15 mins. Slice.
  4. Meanwhile, to make the glaze, heat orange juice and maple syrup over low heat until slightly reduced.
  5. Serve lamb with glaze and salad.
