Veggie Salad
- 1 (20 oz.) can white Shoe Peg corn, drained
- 1 (20 oz.) can small green peas, drained
- 1 (20 oz.) can French-style green beans, drained
- 1 c. finely chopped onions
- 1 c. finely sliced celery
- 1 c. finely chopped green pepper
- 1 (4 oz.) jar chopped pimentos
- 1/2 c. vegetable oil
- 1 c. sugar
- 3/4 c. white vinegar
- salt and pepper to taste
- Combine corn, peas, green beans, onions, celery, green pepper, and pimentos in bowl.
- Toss to mix.
- Combine oil, sugar and vinegar in microwave-safe bowl.
- Microwave on High for several minutes.
- Stir until sugar is dissolved.
- Pour over vegetables; mix well.
- Cool slightly.
- Chill overnight to several days, stirring once each day.
- Season with salt and pepper just before serving.
- Makes 24 servings.
