Blueberry Surprise Cake
- 2 c. sifted flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt (optional)
- 1/2 c. butter or regular margarine
- 2 eggs
- 1/2 c. milk
- 1 tsp. vanilla
- 1 (1 lb. 8 oz.) jar blueberry pie filling
- 1/4 c. sugar (optional)
- Combine flour,
- 1
- cup sugar, baking powder and salt in bowl. Cut
- in
- butter
- until mixture is crumbly.
- Reserve 1/2 cup.
- Beat together eggs, milk and vanilla.
- Add to remaining crumb mixture; stir well.
- Spread in a greased 13 x 9 x 2-inch cake pan.
- Combine blueberry pie filling or any other fruit of your
- choice
- (see Note
- for suggestions) and optional sugar. Spread over
- the
- top of cake batter.
- Sprinkle with reserved 1/2 cup crumbs.

- for 45 minutes or until cake tests done.
- Makes 16 servings.
