Waffle Burgers
- 1 pound potatoes peeled and coarsely grated, excess water squeezed out
- 2 onions 1 grated, 1 chopped
- 2 eggs
- 1/2 pound ground beef
- 1 tablespoon cornstarch
- 1 egg yolk
- 1 pinch paprika
- 1/2 cup tartar sauce
- 1/2 cup plain yogurt
- 1 handful mustard cress or watercress
- tomato slices
- lettuce leaves
- Mix the potatoes and grated onion. Add the eggs and season with salt and pepper. Mix well. Set aside.
- Mix the beef with the chopped onion, cornstarch, egg yolk and paprika. Knead the ingredients together, then divide the mixture into four patties. Set aside. Preheat a waffle iron. Form the potato mixture into 8 thin patties and cook them in the waffle iron until golden. Remove the waffles to a plate. Add the beef patties and cook them in the waffle iron for 3-4 mins until cooked through.
- Mix the tartar sauce and yogurt until smooth and stir in half the cress. Cover four of the potato waffles with some lettuce, then place the burgers on top, followed by some tomato slices and a large dollop of the sauce. Top with the remaining potato waffles. Serve garnished with cress, with the remaining sauce on the side.
