Spiced Apple Cake
- 1 apple
- butter A bit of
- brown sugar A bit more of
- 3 eggs
- 1 cup plain yogurt
- 1/2 cup sunflower oil
- 1 cup brown sugar
- 1/2 cup white sugar
- 3 cups flour
- 2 teaspoons baking powder about 2 tsp
- 1 teaspoon gingerbread spice cinnamon, clove, ginger, cardamom, nutmeg
- Preheat oven to 250u0b0C (approximately 480u0b0F).
- Peel apple, remove core and cut into slices.
- Dot the bottom of the baking dish with small pieces of butter, brown sugar and half of apple slices until well covered.
- In a large mixing bowl, beat eggs with sugar until foamy.
- Add remaining ingredients, including remaining apple slices.
- Grease the sides of pan with non-stick spray or butter, and then pour in batter.
- Bake in preheated oven for about 30 minutes.
- Let cake rest in pan for about 5 minutes.
- Carefully remove cake from pan and let cool on a wire rack.
