Tuna Curry

  1. In a pan, on medium heat, saute the onion and garlic in a little olive oil.
  2. Add the curry powder, saffron, and coriander powder. Cook for 1 minute so spices release their flavors.
  3. Add the tomatoes, and a few tablespoons of water.
  4. Cook covered until the tomatoes become rather soft.
  5. Add the drained tuna, coconut milk, and season with salt. Let simmer.
  6. Serve hot, sprinkled with fresh coriander, and accompany with basmati rice, a green salad, and Naan bread.
