Tuna Curry

  1. Melt butter over medium heat. Saute onion and pepper for 2-3 mins, until onion is tender. Add curry powder and crushed bouillon cube. Cook, stirring, for 1 min. Add tuna and milk. Simmer for 2-3 mins. Add cornstarch slurry and bring to a boil, stirring. Reduce heat and simmer for 3 mins. Add broccolini, spinach and lemon juice. Season. Simmer for 3 mins. Sprinkle spring onions over top. Serve.
