Raspberry, White Chocolate Chip Cookies
- 2/3 cup unsalted butter
- 1 eggs plus 1 egg yolk
- 9/16 cup granulated sugar
- 3/4 cup brown sugar
- 1/2 teaspoon baking soda
- salt
- 1 5/8 cups flour
- 7 1/2 tablespoons white chocolate chips or pieces
- 5/8 cup raspberries fresh or frozen
- Preheat oven to 200 degrees Celsius.
- Heat the butter in a small saucepan until it melts and smells like hazelnuts.
- Strain trough a fine sieve and pour into a bowl, add sugars and mix.
- Add the eggs and mix well to obtain a smooth batter.
- In an another bowl mix flour, baking soda and a pinch of salt.
- Gradually add the flour mixture into the butter-sugar-egg mixture.
- Finish by gently incorporating white chocolate chips and frozen raspberries.
- On a baking sheet lined with parchment paper, drop little mounds of dough with a spoon spacing them apart.
- Bake 10 to 12 minutes.
