Raspberry, White Chocolate Chip Cookies

  1. Preheat oven to 200 degrees Celsius.
  2. Heat the butter in a small saucepan until it melts and smells like hazelnuts.
  3. Strain trough a fine sieve and pour into a bowl, add sugars and mix.
  4. Add the eggs and mix well to obtain a smooth batter.
  5. In an another bowl mix flour, baking soda and a pinch of salt.
  6. Gradually add the flour mixture into the butter-sugar-egg mixture.
  7. Finish by gently incorporating white chocolate chips and frozen raspberries.
  8. On a baking sheet lined with parchment paper, drop little mounds of dough with a spoon spacing them apart.
  9. Bake 10 to 12 minutes.
