Pilau (Pilaf)
- 3 lb. chicken or beef
- 2 lb. Uncle Ben's rice
- 1/2 c. chopped sweet peppers
- 1/4 lb. margarine or butter
- 2 Tbsp. Worcestershire sauce
- 1 can pigeon peas, precooked
- 1/2 c. chopped carrots
- 1/3 c. cream of coconut
- 1 chopped, medium onion
- 1 clove garlic, crushed
- olives and peppers (optional)
- bay leaf
- thyme
- salt to taste
- Cut and season beef or chicken to taste.
- Soften peas; boil in water (add bay leaf and thyme for seasoning).
- In a deep pot, cook beef or chicken in the margarine or butter until brown, then add cooked peas, rice, coconut cream, carrots and all the other seasonings.
- Cover and steam until rice is cooked.
- Check periodically; add some hot water if necessary.
- When cooked, add chopped sweet pepper.
- Serve hot.
