Vegetable Tzimmes

  1. Preheat oven to 350 degrees.
  2. In a large saucepan, cook carrots, white potatoes and sweet potatoes in boiling water until the vegetables are barely tender, about 10 minutes.
  3. Drain.
  4. In a large bowl, mix apricots, honey, cinnamon, nutmeg, brown sugar, orange juice, lemon peel, and 1 cup of water.
  5. Add vegetables and toss.
  6. Pour mixture into a shallow 3 quart baking dish.
  7. Dot the top with margerine or butter pieces.
  8. Bake for 30 minutes, uncovered.
