Vegetable Tzimmes
- 2 pounds carrots peeled, sliced
- 1 pound potatoes peeled, diced
- 2 pounds sweet potatoes peeled, diced
- 1 cup dried apricots chopped
- 1 cup honey
- 1 teaspoon cinnamon ground
- 1 teaspoon nutmeg ground
- 1 teaspoon brown sugar
- 1 tablespoon orange juice
- 2 teaspoons lemon peel grated
- 1 cup water
- 1 tablespoon butter or margarine cut into 1/2" pieces
- Preheat oven to 350 degrees.
- In a large saucepan, cook carrots, white potatoes and sweet potatoes in boiling water until the vegetables are barely tender, about 10 minutes.
- Drain.
- In a large bowl, mix apricots, honey, cinnamon, nutmeg, brown sugar, orange juice, lemon peel, and 1 cup of water.
- Add vegetables and toss.
- Pour mixture into a shallow 3 quart baking dish.
- Dot the top with margerine or butter pieces.
- Bake for 30 minutes, uncovered.
