Mango And Edamame Soba Noodles With Tahini Sauce

  1. Tahini Sauce Preparation:
  2. Mix tahini, garlic, olive oil, lemon juice, salt, and pepper. If mixture is too thick, add a little water.
  3. Soba/Mango and Edamame Preparation:
  4. Cook the soba according to instructions. Approximately 10 minutes.
  5. Refresh in cold water and set aside.
  6. Cut the mango into pieces.
  7. Chop the green onion.
  8. Cut the peas in half.
  9. Add edamame, mango, peas, and scallions to cooled soba. Arrange the strips of nori on top.
  10. Season with Tahini Sauce.
