Mango And Edamame Soba Noodles With Tahini Sauce
- sauce For Tahini
- 1/2 cup tahini sesame paste
- 3 garlic cloves minced
- salt
- ground black pepper
- 3 tablespoons olive oil
- 1/4 cup lemon juice
- soba noodles
- mango
- 225 grams soba noodles
- 1 mango ripe
- 2 green onions
- snow peas sweet
- 1 cup edamame soybeans harvested before ripe
- 1 sheet nori seaweed cut into thin strips
- Tahini Sauce Preparation:
- Mix tahini, garlic, olive oil, lemon juice, salt, and pepper. If mixture is too thick, add a little water.
- Soba/Mango and Edamame Preparation:
- Cook the soba according to instructions. Approximately 10 minutes.
- Refresh in cold water and set aside.
- Cut the mango into pieces.
- Chop the green onion.
- Cut the peas in half.
- Add edamame, mango, peas, and scallions to cooled soba. Arrange the strips of nori on top.
- Season with Tahini Sauce.
