Green Chili Pork
- 2 pounds pork knuckle 1/2-inch cubes
- 2 onions
- 2 cloves garlic
- 4 poblano chiles roasted, peeled and seeded
- 1 green bell pepper chopped
- 2 jalapeno chilies
- 1 pound tomatillos cut in half
- 1 bunch cilantro stems chopped
- 4 lime juice
- 2 teaspoons kosher salt
- tortillas As needed
- cotija cheese As needed
- 1 red onion thinly sliced
- 1. In medium sauce pot cook onion, garlic, peppers, cilantro stems, and tomatillos over medium/high heat for 15 minutes or until tomatillos are soft
- 2. Blend tomatillo mixture with cilantro leaves and lime juice in food processor
- 3. Season pork and brown meat over high heat
- 4. Add green sauce to pork, cook until pork is tender and season to taste
- 5. Serve with tortillas, cheese, and red onion
