Fingerling Purple Sweet Potato Gratin
- 1 large garlic clove minced
- 1/2 pound purple sweet potatoes organic fingerling
- 2 blue potatoes medium organic
- 3/4 teaspoon freshly ground pepper
- 1 sprig thyme
- 1 teaspoon salt
- 3/4 cup whole milk
- 1/2 cup heavy cream
- Preheat oven to 350u0b0F.
- Mince garlic and place on the bottom of the skillet
- Peel potatoes. Cut into thin slices - 1/8 inch - 1/4 inch thick.
- Place the first layer of potato slices on bottom of baking dish, overlapping one another. Layer the rest over the top of that.
- Pour milk and heavy cream over the potatoes
- Sprinkle with salt, pepper and thyme.
- Place skillet in oven and bake for about 45 minutes - 1 1/2 hours, depending on how crispy you want it. Be sure to spoon some of the milk over the potatoes every 15 minutes if necessary.
