Fingerling Purple Sweet Potato Gratin

  1. Preheat oven to 350u0b0F.
  2. Mince garlic and place on the bottom of the skillet
  3. Peel potatoes. Cut into thin slices - 1/8 inch - 1/4 inch thick.
  4. Place the first layer of potato slices on bottom of baking dish, overlapping one another. Layer the rest over the top of that.
  5. Pour milk and heavy cream over the potatoes
  6. Sprinkle with salt, pepper and thyme.
  7. Place skillet in oven and bake for about 45 minutes - 1 1/2 hours, depending on how crispy you want it. Be sure to spoon some of the milk over the potatoes every 15 minutes if necessary.
