Fish Fillets On Spinach
- 1 1/2 lb. haddock, skinless
- juice of 1 lemon
- 1 lb. fresh spinach
- 2 Tbsp. vegetable oil
- 1 medium onion, chopped
- 1 tsp. butter or margarine
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 tomatoes, peeled and sliced
- 1/2 c. grated Mozzarella
- Wash fish; pat dry.
- Sprinkle with lemon juice and let stand for 10 minutes.
- Wash spinach well.
- Chop coarsely.
- Heat oil in frypan.
- Add onion; saute until soft.
- Fry fish in pan with onions a few minutes on each side until golden brown.
- Remove fish and onions; reserve.
- Add spinach to frypan and stir-fry 4 to 5 minutes.
- Grease casserole dish with butter; add spinach.
- Arrange fish on spinach; sprinkle with salt and pepper.
- Place tomatoes on fish and sprinkle with cheese.
- Bake at 350u0b0 for 15 to 20 minutes. Great!
