Granny Sims White Fruit Cake
- 1 lb. candied pineapple
- 1 lb. candied cherries
- 1/2 lb. citron
- 1/2 lb. white raisins
- 1/2 lb. orange and lemon peel
- 1/2 lb. Brazil nuts
- 1 lb. pecans
- 1/2 lb. walnuts
- 2 c. sugar
- 2 1/3 sticks butter
- 9 eggs
- 4 1/2 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1 1/2 tsp. nutmeg
- 1 1/2 tsp. allspice
- 1 Tbsp. cinnamon
- 1 c. white wine
- 1 c. strawberry jam
- Cut fruits and nuts coarsely and flour with 1 cup of flour (reserve some fruits and nuts whole for decorating).
- Cream sugar and butter in mixer; add eggs 1 at a time.
- Add flour, spices and wine, alternating.
- Add jam and stir.
- Add fruits and nuts; stir. Preheat oven to 250u0b0.
- Grease 2 tube pans and line with brown paper bag.
- Bake 3 hours.
- Decorate 1 hour before done.
- Let stand in pans overnight.
