Beef And Spinach-Stuffed Squid
- 3 1/3 cups spinach
- 9/16 pound ground beef
- bread crumbs
- 1 egg
- heavy cream splash
- ground black pepper
- 8 squid small, bodies separated from tentacles
- 1 leek chopped
- 1 onion chopped
- 1 garlic clove diced
- 1 bottle tomato sauce
- 8 ounces water
- 1 vegetable bouillon cube
- salt
- Preheat the oven to 180 degrees Celsius.
- Boil the spinach in salted boiling water.
- Drain and mix in a bowl with the ground beef, bread crumbs, egg, cream, and pepper.
- Fill the squid bodies with this mixture.
- Place on a baking tray and bake for 45 minutes.
- For the sauce, saute together the leek, onion, and garlic.
- Once softened, add the tomato sauce.
- Dissolve 1/2 of the vegetable bouillon cube in a glass of water and add this to the vegetables once they are all warmed through. Salt to taste.
- Simmer 5 minutes then blend.
- Serve the squid with the sauce drizzled on top.
