Gluten-Free Chocolate-Pecan Quickbread
- 4 tablespoons butter melted
- 2 cups all purpose gluten free flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi sweet chocolate chips
- 1/2 cup chopped pecans
- 2 eggs beaten
- 1 cup unsweetened applesauce
- 1/2 cup honey greek yogurt vanilla-
- 1/4 teaspoon pure vanilla extract
- Preheat oven to 350 degrees Fahrenheit.
- Butter a 5"x9" loaf pan.
- Heat the butter until just melted and set aside to cool.
- In a large bowl, combine the flour, sugars, baking soda and salt.
- Stir in the chocolate chips and pecans.
- In a separate bowl, combine the eggs, applesauce, yogurt, vanilla and melted butter.
- Pour the wet mixture into the bowl of dry ingredients and stir until just combined, making certain not to over-mix.
- Pour the batter into the loaf pan.
- Bake for 1 hour or until a toothpick inserted into the center comes out clean.
