Peaches N' Cream
- 3/4 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 3 1/4 oz. pkg. vanilla pudding (not instant)
- 3 Tbsp. butter
- 1 egg
- 1/2 c. milk
- 1 (15 oz.) can sliced peaches, drained (reserve juice)
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 3 Tbsp. reserved juice
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- In large bowl, combine flour, salt, baking powder, pudding, butter, egg and milk. Beat for 2 minutes, medium speed.
- Pour into greased 9-inch pan. Place sliced peaches over batter.
- Combine in a small bowl the cream cheese, 1/2 cup sugar and 3 tablespoons reserved juice; beat 2 minutes at medium speed.
- Spoon to within 1-inch of dish edge.
- Combine and sprinkle over cheese filling 1 tablespoon sugar and cinnamon.
- Bake at 350u0b0 for 30 to 35 minutes. Serves 8.
