Light Apple Muffins
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 cup wheat germ
- 1/4 cup firmly packed brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 eggs beaten
- 1/4 cup skim milk
- 1/4 cup vegetable oil
- 2 cups apple peeled, shredded
- 1 tablespoon grated lemon rind
- cooking spray
- Combine flours, wheat germ, brown sugar, baking powder, soda, salt, cinnamon, and nutmeg in a large bowl; make a well in the center of mixture.
- Combine eggs, milk, and oil; add to dry ingredients, stirring just until moistened.
- Stir in apple and lemon rind.
- Spoon into muffin pans coated with cooking spray, filling 2/3 full.
- Bake at 400 degrees F. for 10 to 12 minutes.
