Hot Milk Cake
- 1/2 cup milk
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 eggs room temp.
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup brown sugar
- 2 tablespoons butter
- 1/2 cup nuts chopped
- 1 cup coconut
- 2 teaspoons milk
- Cake:Scald milk. Mix dry ingredients. Beat eggs with mixer at high speed until lemony and thick. Gradually add sugar while mixer is still on high; take 5 minutes to add sugar. Then at low speed, blend in flour mixture just until smooth. Add warm milk and vanilla just until combined. Pour immediately into an ungreased 10-inch iron skillet or 9-inch square greased baking pan. Bake for 25 to 30 minutes or until cake springs back when lightly pressed.
- Topping:Preheat broiler. Combine all ingredients for topping, adding milk last.
- Spread on warm cake. Broil 5-inches from broiler for about 3 minutes, until bubbles and browns.
