Homemade Bread

  1. Mix the yeast, flour, and salt using a large bowl.
  2. Add 1 cup water to the bowl and mix it with your hands. Do not knead it. If the mixture feels dry, slowly add the remaining 1/2 cup water.
  3. Cover the bowl with plastic film and let it sit for 18 hours in a dry place.
  4. Sprinkle the counter-top with white flour and place the bread dough on it.
  5. Flatten the dough with your hands and then you will need to fold it 4 times in the following order: from left to right, from right to left, from top to bottom, and bottom to top.
  6. Sprinkle a clean kitchen towel with white flour.
  7. Place the folded bread dough in the centre of the kitchen towel. The visible joint of the folded dough should be facing the counter-top.
  8. Sprinkle the dough with white flour and cover it with the remaining sides of the kitchen towel. Let it sit for 2 hours.
  9. Preheat the oven at 230C 30 minutes before the 2 hours have passed.
  10. Place an iron cooking pot with the lid on it in the oven while it heats.
  11. Carefully remove the cooking pot and place the bread dough in it.
  12. Place the lid on the cooking pot and let it bake for 30 minutes.
  13. Carefully remove the lid from the pot and let it cook for 20 more minutes.
  14. Turn off the heat, remove the pot from the oven, and place the bread on a cooling rack for 20 minutes before serving.
