Makrout
- 5 3/8 cups wheat fine semolina
- 1 1/4 cups flour
- 1/2 teaspoon salt
- 4 tablespoons sugar
- 7 tablespoons melted butter
- 2 tablespoons orange flower water
- water
- 9/16 pound date paste or 250 gr. pitted and mixed dates
- 1 zest orange, very fine
- 1/2 teaspoon ground cinnamon
- vegetable oil for frying
- 1 1/4 cups sugar
- 1 tablespoon honey
- water 15 cl.
- 1/2 Orange juice
- 2 tablespoons orange flower water
- In a bowl, combine the semolina with the flour, salt, and sugar.
- Make a well in the middle of the flour mixture and pour in the melted butter and the orange flower water. Mix with your hands and add water until you get a soft dough. If the dough is too sticky, add a little semolina, or if it is too brittle, add a little bit of water. Shape it into a ball and set aside.
- In another bowl, mix the date paste, orange zest, and ground cinnamon. Knead well. Take a piece and form it into a long sausage-like roll. Repeat with the remaining mixture until it is all used. If the date mixture is too sticky, oil your hands with a neutral cooking oil.
- On a work surface, place a piece of makrout dough on top of a piece of plastic wrap and roll it up to the same size as the date rolls. Flatten the roll and place it on top of the date roll. Using the plastic wrap, lift the dough to cover the date roll. Close it well, the date paste must no longer be visible.
- Repeat until all the dough is used. Cut each roll into beveled pieces.
- In a skillet, heat the frying oil and brown the makrouts on each side, then place them on a paper towel
- In a saucepan, combine the sugar, water, honey, and orange juice and let it reduce to a syrup for ten minutes.
- Remove from heat and mix in the orange blossom water.
- Dip the makrouts in the hot syrup.
