Tuna Melt Surprise

  1. Drain pineapple well; reserve 1 teaspoon juice.
  2. In a small bowl, mix the reserved juice, salad dressing and mustard.
  3. Stir together drained pineapple, tuna and celery in separate bowl; add salad dressing mix and mix well.
  4. Arrange the toasted English muffins in an 8 x 8 x 2-inch baking dish.
  5. Top each muffin half with equal amounts of tuna mixture.
  6. Cut the cheese slices in half diagonally and place 1 triangle of cheese on each muffin half. Microwave, uncovered, on High (100% power) for 1 to 2 minutes or until cheese is melted, rotating the dish a half-turn once during cooking time.
  7. Makes 4 servings.
