Apple Rosettes
- 3 apples medium firm, Fudji or red delicious
- 1 frozen puff pastry pack, thawed
- 5 tablespoons apricot jam
- 1 lemon juice from 1/2 lemon to prevent apples from browning
- 1 tablespoon sugar
- 1 tablespoon flour
- 2 teaspoons cinnamon
- powdered sugar for dusting
- Preheat oven to 350 degrees
- Wash and core apples
- Slice as thin as possible
- Add lemon juice and sugar to apple slices in a microwave safe bowl
- Place a bowl into the microwave for 3 minutes until apples are soft but not mushy. Drain liquid before using.
- Place apricot jam into the microwave for 1 minute until liquid and easily spreadable
- Place puff pastry on a flowered surface and roll a thin sheet
- Cut it into 6 individual strips approximately 11x3
- Spread apricot jam on each strip and sprinkle with cinnamon
- Place apple slices (drain liquid)one next to each other so that they slightly overlap
- Fold dough in half
- Roll tightly until apple rosette is formed. Pinch the end to hold it.
- Place apple rosettes into a greased muffin pan
- Bake for 30 minutes, rotating once
- Dust with powdered sugar and enjoy!
