Apple Rosettes

  1. Preheat oven to 350 degrees
  2. Wash and core apples
  3. Slice as thin as possible
  4. Add lemon juice and sugar to apple slices in a microwave safe bowl
  5. Place a bowl into the microwave for 3 minutes until apples are soft but not mushy. Drain liquid before using.
  6. Place apricot jam into the microwave for 1 minute until liquid and easily spreadable
  7. Place puff pastry on a flowered surface and roll a thin sheet
  8. Cut it into 6 individual strips approximately 11x3
  9. Spread apricot jam on each strip and sprinkle with cinnamon
  10. Place apple slices (drain liquid)one next to each other so that they slightly overlap
  11. Fold dough in half
  12. Roll tightly until apple rosette is formed. Pinch the end to hold it.
  13. Place apple rosettes into a greased muffin pan
  14. Bake for 30 minutes, rotating once
  15. Dust with powdered sugar and enjoy!
